Famed Raleigh Chef Ashley Christensen Plans to Pivot Poole’side Pies

Highly acclaimed Southern chef Ashley Christensen brought her version of Neapolitan-style pizza to Raleigh in 2019 with the opening of Poole’side Pies (428 S. McDowell Street) but will close the doors on Saturday, December 23, to rethink the space.

“Poole’side Pies might be leaving, but *we’re* not going anywhere,” writes Christensen, “We’re excited to get to work on a new restaurant to fill this unique space and will share it with you in the months to come.”

The restaurant sits next door to Christensen’s famed Poole’s Diner, which opened in 2007 and is still one of the more difficult reservations to get in Raleigh.

Christensen and AC Restaurants have tackled numerous cuisines over the years: Southern comfort at Poole’s Diner, wood-fired fine dining at Death & Taxes, fried chicken at Beasley’s, cocktails at Fox Liquor Bar, and burgers at the late Chuck’s. What could be next for the group?
