The wait is almost over — Vietnamese restaurant Pink Bellies will open for takeout on Sunday, March 28. From food truck to food stall to pop-ups, a large fan base has followed chef/owner Thai Phi around Charleston, and now they will have a permanent location to find his food at 595 King Street. Starting Sunday, an ordering link will go live on pinkbellies.com and the Instagram account.

Phi says that by starting takeout only he hopes to create “... a light-hearted segue to the completely new immersive indoor dining menu — a menu that leaves us feeling a bit exposed as chefs/artists.” He says that he wants to wait until more of the population is vaccinated against COVID before opening the dining room.

When sending along the takeout menu, Phi says, “This menu is fun and rotating. It introduces our new customers that we’ve gained during the year long construction phase to the style of food we served during our food truck and pop-up days.”

Take a look at the full takeout menu here. It features the popular Pink Bellies’ garlic noodles, as well as new additions like pho and Singaporean dish bak chor mee.

Pink Bellies was supposed to open in March 2020, but there have been the usual delays compounded by the COVID-19 pandemic.

Once open, Pink Bellies will accept takeout orders Thursday through Sunday, from 5 p.m. to 9 p.m.
