It looks like the former Ark Lounge space at 106 Grove St. will finally reopen as butcher shop/burger spot Herd Provisions soon. The restaurant has been on a hiring spree since April, so an opening date is imminent.
Herd Provisions comes from Virginia-based Leaping Waters Farm owner Alec Bradford. The farm raises Ancient White Park cattle, heritage breed turkeys, and a variety of pigs. Bradford brings this products, as well as a restaurant to Grove Street. To accomplish this, he partnered with chef Aaron Swersky, a former fishmonger for Abundant Seafood and cook at FIG.
The establishment first announced its arrival in Charleston in 2017. To gain interest around town, Swersky has done a number of pop-ups, as well as manned a food truck, selling burgers, fries, poutine, and more. The chef says that Herd Provisions will test service with a few family and friends nights, but should be ready to go in early May.
