Spring Street Mexican restaurant Pink Cactus opened for lunch on Wednesday, May 1, and plans to serve brunch on Sunday, May 5 (Cinco de Mayo).

The lunch menu includes tortas, tacos, and quesadillas. The brunch menu offers egg dishes like chilaquiles, huevos divorciados, and lamb tamal, along with tacos, tortas, and masa pancakes.

Going forward, Pink Cactus will open Tuesday through Sunday, from 11 a.m. to 3 p.m. and reopen for dinner service at 5 p.m.

Owner Brooke Warden told Eater that Pink Cactus hopes to open its patio in front of 101A Spring Street for Cinco de Mayo. The restaurant will offer specials for the celebration.

Pink Cactus opened in March with a Oaxacan menu for dinner service. Have you tried the new addition to Spring Street yet? Let us know in the comments what you think.
