Chef Orlando Pagán hopped from McCrady’s Tavern to Cannon Green at the beginning of the new year, but it wasn’t announced at the time that he was to helm new tasting menu space Wild Common within the Spring Street restaurant.

Named after a D.H. Lawrence poem, Wild Common is a chance for Pagán to feature an always-changing, four-course tasting menu using fresh, seasonal ingredients. For $65, guests will sample courses like scallops with pickled strawberries, coconut, puffed tapioca, and chickweed or foie gras cappelletti with pastrami spice and pickled garlic flowers.

Wine pairings will be available, as well as wine by the bottle and cocktails.

Wild Common is housed within the Cannon Green space and will operate separately with its own private entrance. Cannon Green is still available for events. The new tasting-menu restaurant will open in March, but a concrete date is not set at this time. Keep an eye here for more information on the opening.
