EVO’s Famous Pork Trifectas to Take Over Downtown in 2019

Fans of the perfectly crisp pies and seasonal salads at Park Circle favorite EVO Pizzeria will no longer have to drive up north for a bite — the restaurant announced a partnership with Holy City Brewing that brings the famous Pork Trifecta (among others) to a downtown address. EVO Operations Manager Abe Versprille told Post & Courier that the new project, named EVO Holy City, will be located at the defunct Desano Pizza Bakery space at 94 Stuart St.

Desano closed in 2016, with the owner Scott DeSano stating:

We have lost significant money since day one. I kept it open a year longer than any other operator would have based on sales hoping it would turn. Sadly, it just didn’t happen. To put it in perspective, we do more sales on individual Thurs, Fri, Sat and Sun in Nashville than we ever did for an entire week in that store. More each day there than a whole week in CHS. Love the town, everything about it. We just didn’t catch on. We spent more marketing dollars in the first year than we did in all our other stores combined. I picked a bad location. It’s all on me. I am sorry to let you all down. I really am. But I couldn’t continue to subsidize my mistake. We all lose.

These concerns don’t worry EVO and Holy City Brewing however, as the teams believe the strengths of the two names and a renovation of the space will bring followers.

Once open, the facility will house not just a pizzeria, but a full bar, music stage, a retail bakery, and a brewing facility. Look for EVO Holy City to open in 2019.
