Atlanta-based restaurant group Concentrics will open seafood house The Establishment in May. The forthcoming restaurant takes over the historic James Gregorie House at 28 Broad St. Previously law offices, Concentrics has transformed the space into several dining rooms, an open kitchen, bar, and enclosed wine wall.
Eater had a quick tour of The Establishment to check out the interiors and a working menu.
Chef Matt Canter (formerly of FIG and Park Cafe) says what will differentiate The Establishment from other local seafood restaurants will be that he isn’t building the menu around a raw bar. He’s focusing on fish and vegetables. Some offerings may include local chilled shrimp with marinated vegetables, poached razor clams with a parsnip vichyssoise, soft shell crabs with sauce gribiche and pea tendrils, wreckfish with Carolina Gold rice, and braised rabbit with turnip dauphinoise and ramps.
