Posh hotel The Dewberry has been on an executive chef search since November 2016, when opening chef Wes Morton announced he would exit at the end of the year. Eight months later, the property has announced that Geoffroy Deconinck will take the helm in the hotel’s kitchen that serves guests, Southern brasserie Henrietta’s, and swank bar The Living Room.
Deconinck has 15 years of French cuisine expertise from cooking with masters like Daniel Boulud, Jean-Yves Schillinger, David Bouley and Jean-François Piège.
“There is great synergy between Charleston’s Southern roots and the time-honored techniques of French cooking,” says Deconinck.
Deconinck was also up for the title of “People’s Best New Chef” from Food & Wine magazine in 2011 while he worked at Maine-based restaurant Natalie’s.
