Former La Fourchette chef Perig Goulet has spent the past few months turning the former Lana space into his newest concept Goulette, and it’s now open for the hungry public. Goulet told the Charleston City Paper last week that his restaurant would open at 5:00 p.m. on Friday, May 26. Over the weekend, Eater received a tip that. “Goulette is open and is very good!”
Goulet has not released a menu for the corner eatery yet, but listed off a few “not entirely French” menu items to reporter Kinsey Gidick, which included a pulled pork sandwich, “... fish and chips, shrimps on a skewer, chicken salad ...” and plenty of duck fat fries carried over from Goulet’s time at La Fourchette.
Speaking of those famous double-fried fries, chef Kyle Yarbrough, currently of Cumberland Smokehouse and previously of La Fourchette, showed up in the Goulette kitchen last week. Yarbrough posted a photo in front of a few rotisserie chickens with the hashtags #goulette #guesswhosback. Yarbrough’s background in barbecue might explain how pulled pork made it to the opening menu.
