Cocktail Club Welcomes Spring With Killer Tofus and Holy Rollers

The tucked-away Cocktail Club is a place to contemplate cocktails while relaxing in a cozy, leather-clad nook. The second-floor bar recently released its spring drink menu, even though the temperatures have most tipplers searching for bourbon. With the sundresses and shorts coming out soon, mixologist Ryan Welliver concocted a collection of libations featuring warm weather spirits, like rum and tequila, along with fresh juices, and local produce.

For an island getaway, look for a Storm The Beach with two kinds of rum, Velvet Falernum, grapefruit and lime, cinnamon, cumin, Tiki Bitters. Need vegetables? Try the Pea Soup, Order Fire with tequila, Curacao, snow peas, lime juice, agave syrup, and garnished with radishes and pea tendrils. The Holy Roller boasts cognac, Averna, pear liqueur, and bitters. And those with a penchant for NIckelodeon’s 90s cartoon Doug will appreciate the Killer Tofu with tequila, Curacao, tarragon, and beet and pineapple juices.
