Yuichiro “Junior” Takebata Joins Charleston Miyabi

Changes for the West Ashley staple

West Ashley’s Miyabi Japanese Steakhouse and Sushi Bar has recently brought on Kyoto-trained head sushi chef, Yuichiro “Junior” Takebata. The chef worked at the Savannah Miyabi for years, but decided to bring his talents to the Lowcountry. Takebata sources most of the fish he uses in his sushi bar from purveyors who order directly from Tsukiji Fish Market in Tokyo.

“The sushi chef I trained under, allowed me to accompany him to the fish market, it was this experience that showed me what to look for when purchasing fish,” says Takebata. He specializes in nigiri and sashimi, but Miyabi will keep its extensive signature roll menu as well. “When I was working in the restaurant in Kyoto, we never made rolls, but we still went through 250-300 cups of rice in a day,” says Takebata.

Miyabi is located at 688 Citadel Haven Dr. in West Ashley.
