Last week, pitmaster Rodney Scott had everyone marking Tuesday, February 7 as the day to start lining up for whole hog barbecue at his Charleston-based store. The Rodney Scott BBQ Instagram account declared the date, but now the restaurant has had to reel that back due to inspections. Scott told videographer Brenda J. Peart that it could happen on Tuesday.
Barbecue lovers now sit in a holding pattern, waiting for the faintest whisper that smokey meat is available at 1011 King St. A few hogs have already rolled out of the pits because of staff training, but it could be a few more days until money-paying costumers are allowed to line up at the blue front door of Scott’s new store. The best advice is to wait patiently and try not to think about pulled pork, skins, or crispy, salty rinds.
