On the very first day of spring, the soft-shell crabs crawled onto the menu at fine dining destination Cypress. Chef Craig Deihl displayed the catch on Instagram, stating, "Spring is here!"
Soft-shell season usually comes around the first week in April, but it appears the mania can start early this year. Like last spring, Eater will track all the appearances of the crustacean on Charleston menus.
