As brisket master John Lewis works towards opening a shop in Charleston this fall, he kept his skills sharp with pop-ups every Saturday at Revelry Brewing. Last weekend marked the final chance to catch Lewis at the Conroy Street beer house, so Eater photographer Robert Donovan stopped by to catch the action.
For his final summer pop-up, Lewis invited fellow meat maestro Wyatt Dickson (of Durham, NC) to bring a whole hog to serve, along with Lewis's regular offerings of ribs, brisket, and hot guts. The line began at 10:15 a.m., and the meat started flowing at noon.
