Chef Caine Lambert Joins Burger Boutique HoM

A former butcher to fine dining spaces FIG and The Ordinary, Caine Lambert recently transferred his meat knowledge to burger boutique HoM. Named executive chef at the fast-casual ping pong diner, Lambert quickly made changes to menu items and sourced new products from MiBek Farms, Brasstown Beef, and Brown's Court Bakery.

HoM tracks these updates on its Facebook page with daily quotes from the chef, like "It eats like a ribeye or filet," as he muses about meat selections. Lambert took on the task of modifying the work of previous HoM chef Shay MacDonald. He's pared down the previous burger creations (MacDonald's signature menu placed multiple layers of flavors in between the buns) and added new items, like fish and chips, a farmer's bowl, and a mussels with nduja starter. The new menu brings fresh and unexpected ingredients to HoM — reading through the list, it's easy to see Lambert's background at FIG and The Ordinary shining through.
