Collective Coffee Co. will vacate their 41 George St. address to concentrate on their Mount Pleasant store, and the space will reopen as Tricera Coffee. New owner Robbie Dietrich is also the head of Cup - Fine Coffee & Roasters, which means the shop will have the ability to control the roasting process and time the release of beans for maximum freshness. Dietrich tells Eater that the company works with a family-owned and operated coffee farm in Panama to bring prized varietals to Tricera.
Dietrich says the coffee shop will focus on quick service to ensure morning patrons can get in and out swiftly. "Expect to see things on the menu like breakfast burritos, waffles, breakfast sandwiches, and various baked goods made with ingredients sourced from local farms and purveyors."
As far as the interiors go, the one change Dietrich guarantees is a triceratops fossil on display — other renovations will be determined once they get in the space.
