It's nearly the end of white truffle season, but Holy City chefs are celebrating the treasured nuggets with multi-course meals. According to Eater, the product is "[p]rized for their earthy yet pungent aroma and unusual flavor, white truffles are also the most expensive of their mycological cousins due to the limited harvest season (September through December) and challenges associated with foraging them."
Chef Jason Stanhope at FIG has been teasing Instagram followers with truffle porn this week, and tonight is the only evening to experience the little treasures in a tasting menu. The kitchen is still putting the finishing touches on the offerings, but by opening, Stanhope and the team will have created a five-course truffle extravaganza for guests.
It's white truffle month for executive chef Michael Perez and chef de cuisine Kevin Getzewich at Italian eatery Indaco. The team built a three-course meal and pairings for $95. The menu includes coddled egg with truffle cream, ricotta casonsei with white truffle, and bomboloni with white truffle creme anglaise.
