Ease Into Fall with the Sullivan & Co. at The Spectator Hotel

During Cocktail Week 2015, Eater will share a new drink every day and the origin of the libation. Think of it as "Behind the Cocktail" with local bartenders. Today, Steven Huddleston from The Spectator Hotel shares the story behind the Sullivan & Co.

Mixologist Steven Huddleston hails from Boston and brings a bit of his hometown to the bar at The Spectator Hotel. In anticipation of crisper weather and a transition to fall, Huddleston recently added the Sullivan & Co. to the cocktail menu. This golden-hued tipple utilizes a secret family recipe and Lowcountry booze to create the ideal autumnal sip.

"My cousin owns an orchard in Massachusetts, so we have a fondness for apples, and we also own a maple syrup farm right down the road," explains Huddleston. The cocktail contains his grandmother's spiced apple cider recipe, maple syrup, lemon juice, local Virgil Kaine bourbon, and a few sprigs of thyme. Sullivan & Co. is the name of the family orchard. "We serve this at home in Boston during the fall," says Huddleston.

This cocktail and Huddleston can be found at 67 State St., inside The Spectator Hotel.
