Nestled in the heart of the College of Charleston campus, mobile kitchen Pink Bellies receives a lot of support from students. When the kids came back for class, so did the Vietnamese food truck — with an updated menu. The new options give customers a choice of various vermicelli noodle bowls (including a low carb choice), a range of banh mi sandwiches, and chicken drumettes.
Owner Thai Phi says he wanted to simplify the experience. Previously, he posted different daily specials. This new system allows patrons to wake up knowing what to crave from Pink Bellies every day. Though, Phi thinks people really liked the photos of the new creations, so he's still tweaking the system. Either way, fans of Vietnamese food know where to go for a fix of fresh cuisine on the corner of Calhoun and St. Philip Streets.
