Forgive the cruddy picture (humidity is the worst), but the emergence of cult favorite Collective Coffee Co. on George Street had to be documented. Several weeks ago, Eater received several tips that the Mount Pleasant caffeine stop was expanding to downtown, and they were right.
Co-owner Sinan Aktar told us, the team was so thrilled with the community's response to Collective, that they decided to expand to a peninsula-based location, in addition to their East of the Cooper shop. The Aktars (Liz and Sinan) were the proprietors of The Bagel Shop, so they closed the store to reemerge as Collective. Sinan says that due to the smaller size and higher foot traffic, they will streamline their output to cater to more customers on the go. This means, that while they will offer pour over coffee, the focus will be on espresso beverages and cold brew on tap. Collective will also feature a breakfast and lunch menu with daily specials.
Today is the soft opening, and going forward, the establishment at 41-A George St. will be open from 7:00 a.m. to 7:00 p.m.
